½ cup whole rolled oats 3 tablespoons desiccated coconut 2 tablespoons chia 2 tablespoons beetroot powder 1 tablespoons cacao 3 tablespoons cup honey ¼ cup coconut oil ¼ cup hot water ¼ pure pomegranate juice Extra cacao for dusting
Method
Place rolled oats, coconut, chia. beetroot powder, cacao into a blender to roughly chop the ingredients. Remove from the blender and place into a medium sized bowl.
Melt the honey and coconut oil on a low heat (on stove or microwave) until melted and mixed together. Remove the honey and coconut oil mixture from the heat and add to the dry mixture.
Combine both the hot water and pomegranate juice and then slowly add to the mixture until it begins to pull away from the sides of the bowl, forming a very soft dough. Keep mixing until the water is absorbed by the dry ingredients.
Allow to cool in the fridge and roll into ball-shapes. Dust with a cacao.
Place in the fridge to cool completely before eating.
