200g tin organic chickpeas 1 lime, juiced 1 – 2 cm piece ginger 2 tablespoons mint ¼ cup cold pressed virgin olive oil Extra oil to create desired consistency
Method
Place the chickpeas, lime juice, ginger, mint, and olive oil into a blender.
Blend and check consistency.
Continue to blend adding oil as desired for consistency until the ingredients reach a thick paste.
Enjoy with carrots, celery sticks and homemade crackers.
