The Certificate of Human Nutrition course takes you through the latest evidence-based information about essential nutrition knowledge.

​It covers defining a 'good diet', a review of global dietary guidelines, all you need to know about carbohydrates and sugars, the latest on dietary fats (with special coverage of cholesterol and saturated fats), how protein functions, and a special look at vegetarian and vegan diets. You'll also look into micronutrients (vitamins and minerals), water balance and hydration. Plus special topics such as early nutrition (including a look at food allergies), pregnancy nutrition, sports nutrition, weight loss nutrition, nutrition of older adults, food safety and a chapter on dietary assessment (based on a non-diet approach).

If you're toying with the idea of a career in nutrition you might want to consider 'testing the water' first to see if you want to pursue a career in nutrition. 

On completion of this nutrition course you can pathway to a degree and receive a unit exemption/s in the Nutrition or Naturopathic diplomas and degree at Endeavour College of Natural Health or Torrens University!
Also ideal for PTs seeking to work more closely with clients eating.

COURSE CONTENT

Your textbooks comprises around 400 pages of detailed content of tertiary-level information, and is updated constantly so that it reflects the very latest knowledge. Along with your Study Guide, your text walks you through the below topics in detail, using practicals to consolidate your knowledge so you gain an excellent grounding in nutrition so that you can form informed views.
WHAT WILL I LEARN?
The Certificate of Human Nutrition is one of our most substantial courses as it pathways to a number of degrees in Australia, in other words your study is at a degree level, but without the pressure of stressful assignments or exams. While we delve into biochemistry you are not expected to remember this so your assessment task is an open-book quiz that you can move through as you complete each topic, saving as you go and coming back to continue your answers. There is no timeline, deadline or pressure. We want you to learn while you are at your best and without stress.

Nutrition, diet and classification of nutrients
We start out with an introduction into the basic tenants of a 'good diet' and what that means and might look like. While we cover the dietary guidelines from the major regions we look beyond them at nutrition knowledge that has withstood the test of time and reductionism and that speaks to natures wisdom.

The digestive system and its role in nourishment
Of course any course in nutrition must explore the organs and glands that are the very foundation of nourishment. You'll explore organs, their enzymes and hormones that influence what happens to the food we consume, including the digestive system, liver, pancreas, gall bladder, gut and more.

The macronutrients unpacked
in this section we take a deep dive into carbohydrates, protein and fats to understand the metabolism and use of each, their roles in human health, and in deficiency or excess their role in disease. You'll look at techniques to use information to assess the quality of products, as well as cover recommended intakes, sources, blood sugar and the glycaemic index. Protein topics include the two major types of protein sources, the role of amino acids in health and disease, how to determine protein quality, recommended intakes and vegetarian diets. The dietary fats section looks at the chemical structure of lipids and how this (and not merely saturation) determines the fats use in the body, health benefits, requirements and the types of fats that are linked to disease such as trans fats. We take a balanced approach to dietary fats and explore blood cholesterol, and why altering the fat content of foods is not healthful. 

Vitamins, minerals and water balance
This is a big topic and just scratches the surface of an area of study that takes years. Vitamins and mineral exist in a subtle but intricately controlled balance in nature and in the body. Natures wisdom sits deeply within the workings of micronutrients and we have so much more to learn, understand and appreciate in this area. In this topic you will look at the major vitamins and minerals studying their function and outcomes when deficient, where they are found, what factors influence their functions, recommended intakes and finish up with a review of dietary antioxidants and the role of free radicals in health. The minerals section looks at the major minerals from calcium to zinc, their functions, sources, deficiency signs and symptoms and requirements. Lastly we wind this section up with a look at nutritional supplements.

Energy, calories and requirements
In this topic you'll learn how we measure energy, where energy is stored in foods and how much they carry and how to calculate energy intake of foods or meals consumed, as well as how to calculate energy in alcoholic beverages. We move onto assessing energy needs, expenditure and working out estimated energy requirements (EER).

Special dietary needs
Here we cover chapters in sports nutrition and how to fuel for physical activity. Body composition, weight management and nutrition psychology and also food safety. And explore nutrition for children, for pregnancy and for older adults. There is a final topic on nutritional assessment and safe dietary modification techniques.
